Rocky road is such an easy treat to make and take along with you to a party or event. You can make it in advance and store it in the fridge until required. I made mine into a star shape for a Christmas theme. My rocky road recipe is nut free because our daughter has a nut allergy but you could substitute an ingredient for the nuts or just add them in as extra. You don't really miss them in this recipe because the pretzels add a nice crunch.
Dessert
Simple and made in minutes. I made this one for Christmas but change the shape and make whatever theme you wish!
350 grams white chocolate, chopped (good quality)
1 1/2 cup marshmallows, halved
3/4 cup raspberry lollies
3/4 cup chopped gingerbread cookies (or substitute with any cookie of your choice)
3/4 cup pretzels
Sprinkles (optional)
Add raspberries, cookies, marshmallow and pretzels into a large bowl.
Place your star (or other chosen shape) cookie cake template under a piece of baking paper (parchment paper) on a tray or plate.
Melt chocolate in a microwave on 50% power. Start with 1 minute and mix. Then mix every 30 seconds until the chocolate is almost melted. Continue mixing until chocolate is melted. Take care not to overheat the chocolate.
Pour melted chocolate into other ingredients and mix.
Working quickly, spoon rocky road mixture onto baking paper using the cookie template shape underneath as a guide to placement of the mixture. Once placed use the spoon to make any adjustments to the shape or smoothing of sides as required.
Sprinkle the top with sprinkles, if using.
Rocky road is so versatile you can of course use milk or dark chocolate instead of white or mix up the filling ingredients to suit your taste buds.
